Glacial salt is a type of salt that is hard to find in the way that ours is produced. This rare salt is a labor intensive salt to create, and is one of the purest salts on the planet.
Spring fed water is collected high in the mountains in Japan, and goes through a process of freezing and thawing until a salt crust on the stones is is formed.
It then goes through 3 seasons of winter with freezing and sun drying evaporation to naturally concentrate the mineral levels of this amazing salt.
Depending on the year, the spring can be more or less productive, so it is a real treat to have access to this type of salt.
Mushrooms
We have infused our salt with wild mushrooms, which imparts a savory and earthy flavor to the glacial salt.
Porcini is the fruiting body of a fungus that creates a symbiotic relationship with trees, and has a thick white stalk and a dark brown cap. It is well known to be high in antioxidants, promotes digestive health, and is a good source of protein.
