Our aged miso is salty, sweet, earthy, and savory, and produced in accordance with traditional Japanese preparation techniques in small batches. Miso is a traditional fermented food that supports digestion and elimination, while supporting the liver, improving mood, and nourishing the entire body.

Because our miso is full of beneficial bacteria, be sure to keep it refrigerated before and after opening. Use a clean spoon each time you get more miso, being careful not to introduce outside bacteria to the jar.

Ingredients: Organic heirloom brown rice, ancient koji, sun dried glacial salt. Variations in flavor profile come from age and seasonal influences. The Burdock Barley variation ingredients include barley mugi grain, burdock root, soy bean, shio and koji.

Each variation of our miso has its own flavor profile. For a breakdown, read on.. we had a wonderful time taste testing each one of these to give you the best description we could. Although we do recommend you trying each of them to find your favorites. The possibilities with miso are endless in culinary applications. From soups and stews, to marinades, dressings and glazes, the only limit is your imagination in the kitchen. Eating them directly off the spoon is also a lovely way to enjoy these misos. When we want to satisfy a salt craving, or load our palate with a little flavor bomb, a dab of miso satiates.

3 Year Brown Rice Miso

This is our original miso variation, a mainstay in a healthy refrigerator. Light in color, it has a bright and salty flavor profile. It is has the most texture of all of the miso variations, with soft and tasty pulp to add depth to your dishes.

Burdock Barley Miso

Fluffy and soft with a medium pulp, the Burdock Barley Miso has a tart, salty, and a tomato balsamic hint in its flavor profile.

Deep Winter Miso

The office favorite, Deep Winter Miso has a full bodied, teriyaki-esque flavor profile that leaves a robust and smokey presence in the mouth. The balance of this miso is noticed, as it is less salty than the previous, and makes up for it in fullness of flavor.

7 Year Mature Dark Miso

Smooth and velvety, this sweet and soft miso has hints of fruitiness. It mixes beautifully to create a pulp-free miso.

Morning staple

I've drunk miso soup off an on for years. However, I've never had one I've wanted to drink regularly — until now. After reading another reviewer's suggestion above about beginning the day with miso and umeboshi, I thought I'd try it. It's delicious. More importantly, I can feel the difference in my system physically, emotionally and energetically. All good.
